This is not a bug.
In Tools–>preferences–>others, there is a option called “smart keyword handling” if you enable that option even if you enter a string `default`, it will take default value of that column.
Uncheck that option and then try your case, it will work.

For Schema Designer, you can simply press Ctrl+Alt+D.
Or you can simply click on Schema Designer icon at the tool bar.
See the screenshots.
You can also go to powertools and click on schema designer option.

The feature you are looking for is Schema Designer but it is an ENTERPRISE-only feature of SQLyog.
The Schema Designer (introduced in SQLyog version 6.1) is a visual interface where tables and table structures can be defined, displayed and manipulated. The Schema Designer provides a convenient graphical way to perform common operations as an alternative to the menu-based way of operation that was always supported. Also the Schema Designer provides a graphical overview of (complete or only parts of) your databases.

What is the version you are using now and is it COMMUNITY or ENTERPRISE?
If you are using Community version, then you can download the TRIAL version from the link giver below and use this feature.

MemberRegarding: If I perform a query that contains a “SET” column and try to change it, the dialog won't appear to change values.
It works in the table data tab, however.
It is working fine at our end. Dialog for changing SET column is popping up.
Please make sure that result tab is NOT IN “Read Only” mode.
You can edit data in result tab when you have selected table name in the list box.

This feature to “Schedule all the Databases on a server and saving them each in their own .sql file”, is already available from version 6.5.
There are are two different options to backup ALL databases on the server:
1) ALL – Including mysql system database
2)ALL – Excluding mysql system database
Note that both ALL options will not backup the Information_Schema database. This database is a read-only database and cannot be restored. However ,if you want, you may select it individually for export.
There is an option for separate or single SQL file, see the screenshot attached.

So can you please tell us :
1) With what program was that dump (SQL file) generated? 'mysqldump' ?
2) From what MySQL version?
3) To what version do you try to import ?
4) SQLyog program version?

We have improved the speed of exports . This refer to exports as CSV, XML ,HTML, Excel XML and SQL.
It is available publicly in 8.1 RC2, just released!
